- 1 1/2 potatoes
- 1 cup cauliflower florets
- 2 carrots
- 1 cup french beans
- 1/2 cup fresh or frozen peas
- 1 cup diced tomato
- 1/2 cup fresh or frozen sweet corn
- 200 gm paneer
- 2 capsicum (any colour)
- 15-18 pcs cashew nut
- 1/4 cup raisin
- 7-8 almonds
- 1 tbsp poppy seeds
- 1/2 tsp cumin powder
- 1/2 tsp coriander powder
- 1/2 tsp black pepper powder
- 1/2 tsp garam masala powder
- 2 green chilies
- 11/2” ginger
- 1 bay leaf
- 1 star anise
- 2-3 pc green cardamoms
- 2-3 pc cloves
- 1 small cinnamon stick
- 1/2 tsp shahi jeera
- 1/4 tsp hing / asafoetida
- 1 whole red chilli
- 1 pc black cardamom
- 2 tsp sugar
- 1 tsp ghee or clarified butter
- 2 tbsp fresh cream
- 11/2 cup milk
- 1/2 cup white oil
- 1/4 tsp kasoori methi
- To taste Salt
Steps to make to make Navratan Korma (no onion no garlic)
- All veggies cut into same size and arrange it altogether. Now in a deep pan boil all veggies except frozen peas, tomatoes and capsicum. Put little bit sugar to retain the colour of veggies. Boil it for 5-6 mins and drain out water.
- Soak 10 cashew nuts, almonds and poppy seeds into water for 1 hr then grind it altogether with milk. Make a paste with ginger, green chilies and tomato.
- Now heat oil in a pan. Fry paneer, cashew nuts and raisins.
- Into the same oil put all whole spices and hing..crackle it for few seconds. After crackling all spices add ginger-tomato paste and cook it for 2-3 mins.
- Now add cumin powder, coriander powder and black pepper powder and cook it until oil oozes out. After that add boiled veggies and mixed it very well. Put the lid on.
- After 5-6 mins add salt and cashew-almond paste and again cook it for 7-8 mins.
- When oil is getting separate from veggis add milk, paneer and capsicum and cook it until all veggies are completely cooked.
- When veggies are cooked add sugar, fresh cream, fried cashew-raisins, kasoori methi and mixed it really well. Just before getting it off the flame, add ghee and garam masala powder and cook it for 1-2 mins.
- Garnish with fresh cream, and the delicious Navratan Korma is ready to be served. Served with pulao, naan or puri.
